Mushroom Risotto, with Scallops

Ingredients:

  • 2 6oz organic Cremini (baby bella) mushrooms, sliced and chopped

  • 2 shallops, finely diced

  • 2 32oz Chicken bone broth, or vegetable broth if making Vegan

  • 2 cups Arborio Rice

  • 1 lb Sea Scallops

  • Herb options: sage, rosemary, parsley, dill

  • salt & pepper

Optional to add green peas

How to:

  1. Heat 1 tbsp coconut oilk
