3 cans of Skipjack tuna
1/2 cup Mike’s Amazing Avocado Mayo
1 handful (3/4 cup) grated carrots
1 handful (3/4 cup) grated Brussels sprouts
2 tablespoons dried minced onion
2 tablespoons dried parsley
Salt and pepper to taste
Preparation:
Drain the Skipjack tuna thoroughly to remove excess moisture.
In a medium mixing bowl, combine the tuna with the avocado mayo, folding gently until even.
Add the grated carrots, grated Brussels sprouts, minced onion, and parsley.
Season with minced onion, salt and pepper to taste.
Mix until all ingredients are well-incorporated.
