Creamy Sausage Butternut Kale Soup

Ingredients:

1 lb @butcher_box sweet sausage 

1 medium butternut squash

8oz shiitake mushrooms

1 sweet onion

3 three garlic cloves

1 bunch of kale 

1 can unsweetened coconut milk 

Chicken bone broth

How To:

Prepwork

- cut squash into 1 inch chunks, mince garlic, dice 1/2 of the onion (mine was huge), rip leaves off kale into pieces. 

Action work

- In a large pot brown the sausage while breaking it into pieces. 

- Move sausage to edges and add the garlic & onions. Cook for 2 mins.

- Add squash, mix and cover pot. Cook for 5-7 minutes until squash is tenderish. 

- Add mushrooms & kale, mix and cook until kale whilts ~ 3 mins. 

- Add full can of coconut milk. Using the same can measure out 2 cans of chicken bone broth. 

- allow soup to simmer for 5-10 mins. 

Taste test!! Maybe add a dash or 2 I’d nutmeg, that brings it over the edge 😋

What’s so great about this soup is its really full of good for you fat from the sausage and coconut. Its also loaded with veggies! And who does'n’t love veggies? No one! Really a family pleaser and Alice even asked for seconds! Which is a win in my books.
